SPICY PEANUT NOODLES WITH TOFU

A staple in our house.  This spicy peanut sauce is one of our favorite ones. It is one of those that makes you feel good, is comforting, easy to do and can be used in many ways.

On today’s recipe, I am adding a simple tofu recipe to go along this dish. But you can use it for any other dish too. That’s what I love about this combo! It can be easily done and adaptable to anything you want. You can add different veggies, or make it spicier, or more peanuty. The mixes are endless.

SPICY PEANUT NOODLES WITH TOFU 

INGREDIENTS:

  • 6 ounces thin rice noodles

    1. 1-2 Minced garlic cloves

    2. 1/4 chopped white onion

    3. 2-3 Carrots thin sliced

    4. 1 Pepper, sliced

    5. 1 cup chopped broccoli

    6. 1 Tbsp of olive oil

BAKED TOFU:

  • 1/2 Block of tofu cubed

    1. 1 Tbsp liquid aminos

    2. 1 tsp smoked paprika

    3. 1 tsp garlic powder

SPICY PEANUT SAUCE:

  • 1/2 cup salted creamy peanut butter

    1. 1-2 Tbsp liquid aminos 

    2. 1-2 Tbsp maple syrup 

    3. 1 Tbsp chili garlic sauce (adjust to preferred spice level, also 1 tbsp of sriracha and tsp of minced garlic works)

    4. 2-3 Tbsp lime juice

    5. 1/2 cup water (to thin)

DIRECTIONS:

  • Pre-heat the oven to 380F/193C.

    1. In a large pot add water let it boil and add the rice noodles. Cook in low heat for 8-10 mins.

    2. Meanwhile, in a bowl mix the tofu sauce and diced the tofu. Mix the sauce and the tofu and place it on the oven on a baking tray. Bake for 30 mins, flipping them halfway through.

    3. Heat a pan and add the olive oil, once warm saute the onion and garlic. Once the onion is translucent add the remaining veggies.

    4. In the meantime mix all the peanut sauce ingredients in a bowl. Add more water for a thinner sauce. Taste and adjust to your liking.

    5. Once the noodles are done, drain and set aside. Take the tofu out once it is done and set aside.

    6. Mix the sauce, the noodles, and veggies in a bowl and add tofu on top.
